Stretching Your Food Dollar: Inside the New Budget Bites Project

Last Updated on October 15, 2026 by Brenda

When the end of the month rolls around and the grocery money is running low, figuring out what to put on the dinner table can feel like an impossible puzzle. With recent data showing a 25% poverty rate and food insecurity affecting over 20% of households in Quay County, the Quay County Health Council wanted to create a practical, local solution that relies on real-life experience rather than high costs.

We invite you to check out our new website built by people who know what it’s like to feed a family on a tight budget and a busy schedule.  Budget Bites isn’t just another static recipe site; it’s an evolving community resource designed to make every dollar count. Key sections include:

Shopping Tips:  The first step to making the grocery dollar go further at the grocery store.  Many tips are shared from our moms. We also included some resource information and there will be a new recipe of the week each Monday.

The first two recipe pages to open will be Skillet Meals & Tasty Sides: Quick, budget-friendly recipes designed to make weeknight cooking simple and delicious.

Cook Once, Eat Twice: Master the art of batch cooking—turning a single large meal (like a roast or a batch of meatballs) into multiple distinct, exciting meals for later in the week.

Pantry Puzzlers: Ever wonder what to do with that mystery can of farina, canned pork, or government commodity box item? List your questions or pantry items here on our evaluation and watch the pantry puzzlers page for creative ideas from local experts.

New pages of recipes will open each month and many will have videos on how to make the recipes from your neighbors.

Local Resource Mapping: Direct links to community meals, food pantries, and the Need No More app—a fantastic tool that tracks real-time pantry hours and closures so you never make a wasted trip.

Win Prizes Just for Trying the Recipes!  The health council doesn’t just want to give you recipes; they want to support you physically and financially. If you live in Quay County, you can scroll to the bottom of any recipe page on Budget Bites and fill out a quick evaluation after trying the dish.  Two gift cards to a local grocery store are given away every month (running September through May).  Three pieces of essential cooking equipment (like crockpots) are being given away during this period to help make meal prep even easier.

Get Connected Today!  Whether you are looking for smart meal-planning tips, trying to figure out how to use your pantry staples, or wanting to share your own kitchen secrets, Budget Bites is here for you.  Look for the Budget Bites QR code on magnetics or recipe handouts at local tabling events, follow weekly posts on social media, or visit the Quay County Health Council website under the project tabs.  https://qchealthcouncil.ort/budget-bites/
